A traditional St. Lucian-style stewed chicken made with caramelized sugar as the sauce base, seasoned with aromatic spices and herbs for an authentic Caribbean flavor.

Prepare the chicken drumsticks by washing them with lemon juice and vinegar, then remove the skin.

Season the chicken with oil, fresh garlic, salt, pepper, celery powder, Sazon, curry powder, and green seasoning. Mix well to coat evenly.

Marinate the seasoned chicken covered with plastic wrap in the refrigerator for at least 15 minutes, or preferably overnight.

In a clean pan, heat the oil and add sugar. Allow it to caramelize on medium heat, stirring occasionally until it becomes dark and foamy.

Add the marinated chicken to the caramelized sugar, spreading it out evenly. Do not stir immediately. Cover and cook for about 5 minutes to develop a golden brown color.

After 5 minutes, check the browning and stir the chicken to coat it evenly with the caramel sauce.

Add fresh thyme, one whole Scotch bonnet pepper, tomato ketchup, and water (about 3 cups) that has been mixed with the seasoning bowl from the marinated chicken.

Cover the pot and simmer on medium heat for about 30 minutes.

Add the chopped carrot if desired and cover the pot for an additional 5 minutes on medium heat.

After approximately 45 minutes total cooking time, the chicken is fully cooked. Plate the stewed chicken with the sauce and garnish with fresh basil.
