Tender mashed potatoes mixed with melted Oaxaca cheese form the heart of these golden taquitos, while thin-sliced marinated beef seasoned with citrus, garlic, and warm spices brings depth and savory complexity. Finished with fresh garnishes including guacamole, sour cream, and Mexican crema.

Ingredients

In a bowl, combine orange juice, lime juice, olive oil, minced garlic, and all the spices. Mix well.

Add the thin-sliced beef to the marinade and stir to coat completely. Mix in the sliced onion and cilantro.

Cover with plastic wrap and let the beef marinate.

Rinse the potatoes, then roughly chop them into medium pieces and transfer to a saucepan.

Season the potatoes with salt and cover with water. Heat over medium heat until boiling.

Cook for 15 minutes or until the potatoes are tender. Drain the water.

Mash the drained potatoes. Taste them—if well-seasoned, skip additional salt but add black pepper and garlic powder. Mix well.

Mix in the queso Oaxaca to create the potato filling.

Prepare the tortillas by placing them stacked in the microwave, wrapped in paper towels, to soften them.

Take a tortilla, add a spoonful of the potato filling, and roll tightly.

Carefully place the rolled taquitos into hot oil, seam-side down. Fry until golden brown on all sides.

While the taquitos fry, cook the marinated beef on a hot comal or griddle over medium-high heat until fully cooked. Once all the meat is done, chop it into small pieces and return it to the skillet to keep warm.

Plate the fried taquitos and top with blended guacamole, sour cream, queso Oaxaca and cheddar cheese, the warm carne asada, fresh lettuce, and a drizzle of Mexican crema.
