   Prepare the pie crust for blind baking by piercing it with a fork, laying down parchment paper, adding baking beans or rice mixture on top, and baking at 400°F for 10 minutes.

   Prepare the filling by slicing mushrooms into small pieces, dicing a small yellow onion, and roughly chopping bacon (about 4oz). Combine everything in a skillet with olive oil and sauté over medium-high heat for about 10 minutes until the edges develop color, then let cool and set aside.

   Make the custard by whisking together 6 eggs and 2/3 cup of heavy cream, season with salt and pepper, and whisk until well combined.
