   Finely dice the onions and mince the garlic clove.

   In a large bowl, combine the ground meat with mustard, tomato paste, salt, pepper, and the meatball spice blend. Knead everything together with clean hands until smooth and evenly mixed.

   Fold the diced onions and minced garlic into the meat mixture and knead again to combine evenly.

   Divide the meat mixture into four equal portions of approximately 180g each. Shape each into a ball, then use your thumb to press a shallow but deep enough indentation in the center to hold an egg.

   Heat a little oil in a pan over medium heat. Place the four meatballs into the pan and sear until partially cooked.

   Preheat the oven to 200°C (about 400°F). Once the meatballs are partially cooked, crack an egg into the indentation of each nest, being careful to keep the yolk intact.

   Sprinkle a little paprika over the eggs.

   Transfer the pan to the preheated 200°C oven and bake for 12 to 15 minutes until the eggs are fully set and the meat is cooked through.
