Toast the sourdough bread slices until crispy for the bruschetta base.

Prepare the tomato topping by chopping ripe heirloom tomatoes and placing on the toasted bread.

Open the tin of sustainable tuna and break it up slightly using the lemon juice and the oil from the tin, creating a mix of creamy paste and chunks.

Add the finely shaved fennel, rocket leaves, crushed capers, and fresh red chilli to the tuna mixture and toss gently to combine.

Plate the tuna salad mixture on top of the tomato bruschetta, add lemon zest for garnish, and serve.
