Cut 300g of beef into bite-sized pieces, slicing against the grain at an angle to ensure the meat stays tender.

In a bowl, combine the beef with soy sauce, Shaoxing wine, white pepper, baking soda, cornstarch, and neutral oil. Massage the marinade into the meat thoroughly.

Cut one large onion into thick slices. Slice the white parts of the green onions for aromatic oil and cut the green parts into long strips.

Smash three garlic cloves and mince them finely, then grate about two teaspoons of ginger.

In a small bowl, whisk together water, chicken bouillon powder, soy sauce, sugar, oyster sauce, dark soy sauce, Shaoxing wine, black pepper, and cornstarch to make the sauce.

Boil water in a pot, add noodles and cook according to package instructions. Drain the noodles and coat with oil to prevent sticking.

Heat 1 tbsp of oil in a wok over high heat. Add the marinated beef, spread it out, and sear for about 1 minute until nicely browned on the bottom.

Flip the beef and cook the other side for about 1-2 minutes. The beef doesn't need to be cooked through at this point.

Remove the beef and set aside. Add another 1 tbsp of oil to the wok and heat. Add the onion slices, spread them out, and char for 1-2 minutes until nicely colored.

Optionally add 3-4 dried chilies for spiciness.

Add the white parts of the green onions, minced garlic, grated ginger, and five-spice powder. Stir-fry for about 1 minute to infuse all the flavors together.

Return the beef and noodles to the wok and stir-fry for about 1 minute until well combined.

Pour in the sauce and toss everything together for about 2 minutes until the beef and noodles are perfectly coated.

Turn off the heat, add the green parts of the green onions and 1 tsp of toasted sesame oil, and gently mix to maintain the freshness of the green onions.

Plate the noodles and garnish with green onion strips and dried chilies before serving.
