An oven-roasted Caribbean jerk chicken seasoned with dry jerk rub and marinated for 24 hours in homemade jerk marinade, then roasted and finished with a house-made jerk barbecue sauce. Juicy, tender, and packed with authentic Jamaican flavors.

Homemade Jerk Marinade½ cup

BBQ Sauce~3-4 tbspest.
Sugar~1-2 tbspest.
Homemade Jerk Marinadefor sauce1 tbsp
Juices from cooked chickenfor making sauce~¼ cupsest.

Wash the chicken and slit along the joints to allow marinades to penetrate deeply.

Season the chicken thoroughly with salt, making sure to coat under the skin and in the cavities.

Apply the dry jerk seasoning generously and evenly, rubbing it thoroughly over all surfaces.

Add the homemade jerk marinade and distribute it evenly, saturating the chicken thoroughly.

Cover and refrigerate for 24 hours to allow the chicken to marinate thoroughly.

Transfer the marinated chicken and remaining marinade to an oven-safe pan and roast in a preheated 200°C (390°F) oven for about 40 minutes.

After 40 minutes, remove some of the flavorful pan juices to prepare the jerk barbecue sauce.

Mix the reserved juices with ketchup, barbecue sauce, sugar, and a tablespoon of jerk marinade to create the sauce, stirring well and tasting to adjust seasoning.

Return the chicken to the oven and continue roasting for another 20 minutes.

At the 1-hour mark, brush the chicken with the jerk barbecue sauce and return to the oven for a final 20 minutes until the chicken is fully cooked and beautifully browned.

After a total of 1 hour and 20 minutes, the chicken is fully cooked with beautiful coloring on both sides—remove and serve.
