   Heat oil in a pan and add the onion and garlic, cooking and stirring constantly until the onion is tender and cooked through.

   Add the diced tomatoes, serrano chiles, and cilantro to the pan with salt to taste, and cook until the tomatoes are well fried and cooked through.

   Clean the sardines and carefully remove all the bones and fine spines from the center of each fish.

   Add the deboned sardines to the tomato mixture and stir gently to combine. If the mixture appears too dry, add a small amount of sardine broth to moisten it.
