   Mince the garlic. Chop the green onion stems into small pieces and cut the leafy part into 2-inch sections, keeping them separate.

   Cut the onion into strips and cabbage into 1-inch thick slices, separating the layers to make stir-frying easier.

   Peel the shrimp, rinse with cold water, and pat dry. Marinate with salt, sugar, white pepper powder, and cornstarch, mix well, then add sesame oil.

   Add frozen udon directly to boiling water and cook until hot and loosened, then remove from the water without fully cooking.

   Heat oil in a pan over medium-high heat, add a touch of salt and sugar, then immediately add onion and cabbage. Stir fry for about 1 minute, season with dark soy sauce for color and flavor, toss to combine evenly, then remove.
