Ingredients

Prepare the stale bread by tearing or cutting it into irregular pieces. If the bread is fresh, dry it out overnight on the counter or in a low oven until hardened.

Finely chop plenty of onions and celery, along with fresh herbs (parsley, rosemary, and thyme), and set each aside.

Remove the Italian sausage from its casing and brown it in a skillet until crispy and crumbly. Remove to a plate, leaving behind the drippings in the pan.

In the same skillet, add butter and extra virgin olive oil. Once melted, add the celery and onions with a pinch of salt and cook over medium heat for 10 to 15 minutes until soft and flavorful.

Stir in the cooked sausage and cook for a few minutes. Optionally deglaze the pan with red wine or light beer, letting it reduce, then add the fresh herbs.

Remove from heat and let cool slightly.

Add the torn bread pieces to the cooled sausage and vegetable mixture.

Whisk eggs together with chicken stock and add to the bread mixture, stirring well. The mixture will look wet, but the bread will absorb the liquid as it bakes.

Transfer the mixture to a greased casserole or baking dish, spreading it evenly.

Preheat the oven to 350°F. Cover with a lid or foil and bake for 30 minutes, then uncover and bake for another 30 minutes until the top is golden and crispy.
